Gajar Ka Murraba (Carrot Preserve)


  • 900gms Carrots
  • 4cups sugar
  • 21/2 cup water
  • 1 Lemon juice
  • 1/2tsp. cardamom seeds (coarsely ground)


  • Peel the carrots and siscard the woody part. Cut the flesh into large pieces and prick all over with a fork.
  • Put the pieces in a saucepan with enough water to cover and bring to boil.
  • As soon as water starts boiling, remove from heat and drain off the water.
  • Prepare the one string syrup by dissolving the sugar in the water.
  • Boil gently and add carrots to the syrup and stir in the lemon juice.
  • Continue cooking over a low heat until the carrots are tender and the syrup is thick.
  • Allow to cool then stir in the cardamom before serving.
