Eggs Handling & Storage Tips :

  • To remove eggs that are stuck to cartons, try wetting the cartons to loosen them.
  • Always store eggs in the refrigerator in their original cartons.
  • If your hands are damp it is easier to handle eggs in the shell.
  • To tell is an egg is fresh, place it in a bowl of water. Fresh eggs will sink to the bottom and lie on the side. As the egg ages, the air cell in the large end becomes larger. As it does, the egg becomes more buoyant. An older egg will stand up in the bowl of water and really old egg bobs along the top.
  • Thick white is a sign of freshness. If there is a lot of jelly-like white, the egg is fresh. As it ages the white thins out.
  • Eggs are usually good if refrigerated for one to two weeks after purchase. The "sell by" date is 30 days after the pack date on the carton. They are good however 4 -5 weeks beyond the pack date.
  • Eggs are placed in their cartons large end up to keep the air cell in place and the yolk centered.
  • Store eggs in their cartons to keep them fresh and prevent them from absorbing odors from other foods in the refrigerator.
  • If you drop an egg on the floor, sprinkle it heavily with salt for easier clean-up.

Hard Cooking

  • Older eggs peel more easily than fresh eggs. Use eggs 1 week old or more for hard cooking.
  • Hard cooked eggs will slice easier if you dip the knife in water before cutting.
  • When hard cooking eggs, if the egg cracks, remove it and rub salt into the crack, then replace and continue cooking.
  • To tell if an egg is raw or hard cooked, spin it. If the egg spins easily, it's hard cooked but if it wobbles, it's raw.

Whipping

  • Egg yolks separate best when cold.
  • An easy way to separate eggs is to place a small funnel over a small measuring cup. Break the eggs into the funnel, or use an egg separator, a handy device that can be purchased in any cookware store.
  • When whipping eggs, start with a low speed and then gradually work up to the whip setting on the mixer. The lower speed stretches the protein molecules and makes the mixture more readily accept air.
  • When adding sugar to egg whites begin after the whites are foamy and then add 1 tablespoon at a time, beating as you slowly sprinkle the sugar in.
  • When storing egg yolks in the refrigerator, place them in a bowl, cover them with water and then plastic wrap.
  • Pans and dishes used for mixing, beating or cooking eggs should be rinsed with cold water and then washed with hot soapy water. If you run hot water on the eggs, it will cook them and make them harder to remove.

Leftover Eggs

  • Use as a facial masque. Mix well and then spread all over the face. Allow to dry and then wash off.
  • Use yolks as a hair conditioner. Shampoo as usual and then rub yolks into hair. Allow to remain for a few minutes and then rinse well.
  • You can grind up old egg shells and dig them into your garden for calcium enrichment.
