II   Pitchki Arbi II


  • 675gms Artichokes (Arbi)
  • 1 cup gram flour
  • Salt to taste
  • 1tsp. red chili powder or to taste
  • 1tbsp Carom seeds  (ajwain)
  • 1 green chili chopped
  • oil for deep-frying

Preperation :

  • Boil the artichokes in water until tender, about 15 minutes then peel them.
  • Make a batter by gradually adding water to the gram flour to make a creamy batter.
  • Add salt to taste with the chili powder, and carom seeds.
  • Heat the oil in a kadhai. take each artichoke and flatten it between the palms.
  • Dip them in the batter, one at a time and fry in the oil, two or three at a time.
  • When golden brown, drain on absorbent kitchen paper and keep hot until all artichokes are cooked.
  • Serve hot or cold, as a dry dish with a meal or as a snack.
