II   Baigan Bharta  II


  • 1 Large Brinjal (Baingan) Seedless 
  • 1 Onion finely chopped
  • 1 Big Tomato finely chopped
  • 1/2 cup Boiled Green peas (optional)
  • 1tsp Ginger grated
  • 1tsp Garlic grated
  • 1 or 2 green chilies finely chopped
  • Coriander leaves finely chopped
  • 1 tsp. coriander (dhania powder)
  • 3 tbsp oil
  • Red chili powder  to taste
  • Garam masala to taste
  • Salt to taste
  • Preperation :
  • Place the brinjal over fire, to burn the skin (or bake the baingan in the oven for 45 minutes at 400 degrees.)
  • When skin blacken hold under running water.
  • Now gently peel off the skin and mash it properly.
  • Heat oil in a kadai and add grated ginger & garlic stir-fry till light brown.
  • Now add tomatoes and fry till tomatoes soften.
  • Add Onion and green chilies and stir-fry for a minute.
  • Now add all spices (salt, chili powder, garam masala, coriander powder)
  • Stir-fry till it starts leaving oil.
  • Now add mashed Brinjal and mix it properly.
  • Add boiled green peas.
  • Stir on low flame for 5 minutes.
  • Garnish with coriander leaves and serve hot with Pulka or Paratha.
