															| II  Fried 
																		Cabbage (Bandhgobhi Bhaji)  II |  
															| Ingredients: 
																	
																		
																			1 medium cabbage (coarsely chopped)
																		
																			3/4th cup green peas
																		
																			100gms carrots (sliced)
																		
																			100gms potatoes (coarsely chopped)
																		
																			1 small onion (chopped)
																		
																			225gms tomatoes (peeled and sliced)
																		
																			6 cloves  of garlic (crushed)
																		
																			1tbsp grated ginger
																		
																			1 green chili (chopped)
																		
																			Salt to taste
																		
																			1tsp  cumin seeds
																		
																			1tsp garam masala
																		
																			1 tsp turmeric powder
																		
																			1tsp green mango powder (amchur)
																		
																			1tbsp chopped coriander leaves
																		
																			3tbsp melted butter
																		
																			1/2 cup oil or ghee
																		 
																	Preperation :
																 
																	
																		
																			
																				Heat the ghee / oil in a saucepan and fry the 
																					onions and garlic with the cumin until golden brown.
																			
																				Add the turmeric and shake the pan for few 
																					seconds.
																			
																				Add the cabbage, potatoes, peas, carrots and 
																					salt.
																			
																				Cook stirring continuously, for 5 minutes, then 
																					cover and cook on low heat for 10 minutes.
																			
																				Add the tomatoes, mango powder, chili, ginger. 
																					Stir well, replace the lid and continue to cook for further 10 minutes.
																			
																				Stir in garam masala and coriander, heat through 
																					5 minutes and then serve sprinkled with melted butter.
