II  Fried Okra (Bhindi Fry)  II


  • 450gms / 1lb Okra / Lady-finger / Bhindi (sliced)
  • 2 green chilies (Chopped)
  • 6 cloves garlic (crushed)
  • 1tbsp grated ginger
  • 1/2 cup ghee
  • Salt to taste
  • 1tbsp green mango powder (amchur)
  • 1tbsp butter

Spices :

  • 1tsp turmeric powder
  • 2 dry red chilies (crushed)
  • 1tsp cumin seeds

Preperation :

  • Heat the ghee in a frying pan and fry the garlic until light brown.
  • Remove from the heat and add all spices.
  • Stir well and return to the heat.
  • Now add the okra, chili and ginger and mix well. Cook uncovered for 20 minutes, stirring occasionally.
  • When the okra is cooked, add salt and green mango powder and cook for further 5 minutes.
  • Serve dotted with butter.
