II Gajrela (Carrot Pudding)II

Ingredients:

  • 500 gms Carrots (Gajar) (skinned and grated)
  • 200 gms Khoya (mashed)
  • 10 cahew nuts
  • 6-8 cardamoms (powdered)
  • 2 silver leaves (Chandi varak)
  • 1 litre Milk
  • 1 cup sugar or to taste
  • 4 tsp almonds (blanched and split)
  • 1 tsp pure ghee /  unsalted butter

Preperation :

  • Boil the milk and sugar, then add the grated carrots. Cook together milk, sugar, grated carrots and khoya on medium heat.
  • Cook until the mixture thickens.
  • Add 1 tsp of ghee and fry lightly.
  • Lastly add the cashews, almonds and cardamom powder.
  • To be served hot garnished with silver leaves.
