II Christmas Cake II


  • 175 gm All purpose flour (Maida)
  • 120 gm margarine/ unsalted butter
  • 120 gm sugar
  • 2 eggs
  • 1 tbsp. Milk
  • 50 gm mixed fruit (Currants Sultanas, raisins)
  • 15 gm walnuts chopped.
  • 25 gm almonds chopped.
  • 1tsp Baking powder.


  • Grease a round cake pan with butter and dust with flour.
  • Sift the flour and baking powder 3-4 times in a muslin cloth or very fine strainer.
  • Cream the butter and sugar till light and fluffy.
  • Beat the eggs and add to the cream mixture and add sifted flour.
  • Blend the mixture well and add chopped walnuts, almonds and fruits.
  • Pour the milk and stir well till mixture becomes smooth.
  • Pour the batter in the greased pan.
  • Bake in a pre-heated Oven for 20-25 minute or until done, at 350 degree F.
