Baingan-Da- BhurtaII |
Ingredients:

2 Aubergines / Eggplants (Baingan)

4 onions (finely chopped)

2 green chilies (chopped)

4 tomatoes (finely chopped)

Salt to taste

1/4th cup oil
-
2 tsp grated ginger
-
1/2 tsp chili powder
-
2 tbsp chopped coriander leaves

1/2 cup shelled peas
Preperation :

Keep the aubergines whole. Apply oil and roast it on a gas flame
or a barbecue. When it is cool, peel the burnt skin.

Fry the onions until transparent, Add the tomatoes, chili powder
and green chilies.

Fry until the tomatoes are mushy. Add the green peas.

Now add the peeled and mashed aubergine and fry for few minutes.
Add salt.

Garnish with chopped coriander.
