Ingredients:

1 Large Brinjal (Baingan) Seedless

1 Onion finely chopped
-
1 Big Tomato finely chopped
-
1/2 cup Boiled Green peas (optional)
-
1tsp Ginger grated
-
1tsp Garlic grated
-
1 or 2 green chilies finely chopped
-
Coriander leaves finely chopped
-
1 tsp. coriander (dhania powder)
-
3 tbsp oil
-
Red chili powder to taste
-
Garam masala to taste
-
Salt to taste

Preperation :
-
Place the brinjal over fire, to burn the skin
(or bake the baingan in the oven for 45 minutes at 400 degrees.)

When skin blacken hold under running water.

Now gently peel off the skin and mash it
properly.

Heat oil in a kadai and add grated ginger &
garlic stir-fry till light brown.

Now add tomatoes and fry till tomatoes soften.
-
Add Onion and green chilies and stir-fry for a
minute.

Now add all spices (salt, chili powder, garam
masala, coriander powder)
-
Stir-fry till it starts leaving oil.
-
Now add mashed Brinjal and mix it properly.
-
Add boiled green peas.
-
Stir on low flame for 5 minutes.
-
Garnish with coriander leaves and serve hot with
Pulka or Paratha.
