Lauki Kofta II |
Ingredients:

1Kg. Lauki (Bottle Gourd)

1/4 Cup Besan
-
2 medium size Onions, finely
chopped
-
6 cloves of Garlic - paste
-
1inch piece of Ginger - paste
-
2 medium Tomatoes, pureed
-
1 tsp. Red chili powder or to taste
-
2 tbsp. coriander powder
-
Salt to taste
-
1 tsp. Cumin powder
-
1/2 tsp. turmeric Powder
-
1/4 tsp. Amchur Powder
-
1/4 tsp. Garam masala powder
-
Oil for Frying
Preparation:

Peel and grate the bottle gourd. Mix half-teaspoon salt and keep
aside for ten minutes. Squeeze to remove excess water. Add besan, red
chilli powder, amchur powder and mix. Divide it in to ten to
twelve equal portions. Wet your palm and shape the portions into a
ball.

Heat Oil in a deep pan and deep-fry the balls, on a
medium heat, till golden brown in colour. Drain onto an absorbent paper
and keep aside.

Heat 2-3 tbsp. oil in a pan and add chopped onions and
saute until golden brown in colour. Add ginger-garlic paste and stir-fry for
few seconds.

Now add turmeic powder, coriander powder, salt, red
chilli powder and cumin powder. Stirring continously cook for a minute on a
medium heat .

Add tomato puree and increase the heat. Cook till the
oil starts separating, stirring occasionally.

Now add 2 cups of water and bring to boil. Simmer
and cook for 5 minutes or till desired consistency.

Add the koftas and cook for another 2-3 minutes.

Serve immediately garnished with chopped coriander and
sprinkled with garam masala powder.
